30 Days of Thanks: Nantucket Cranberry Pie

I’m sort of proud of myself: I managed to make it 8 days without talking about food.  Because, oh boy, am I thankful for some of the delicious food in our life.

Today, there are two things worth mentioning: the delicious picnic lunch we had with food to go from The Brotherhood and the local produce I’m still able to buy.  Today was a wonderful 65 degree November day.  Part of me is ready for scarves and mittens and Thanksgiving, but another part of me is thankful for any last day of warmth we get before our long Nantucket winters.  So when we woke up to perfect warmth (and a kitchen still messy from the night before, shhh), I knew we needed to get out of the house.  We ended up getting lunch from The Brotherhood and heading over to Children’s Beach for a surprise November picnic (almost as exciting as the surprise day in October when everyone went swimming).  Not only am I thankful for the wonderful weather, but I’m also thankful for the Brotherhood.  One of the perks of Chris being the chef is that we get to eat for free.  I’m incredibly thankful for that, because if he didn’t have that perk, we would literally never eat out for budgetary reasons.  The other thing I’m thankful for, the fact that even in November I am still able to buy local beets, cauliflower, scallions, winter squash, and cranberries (for 10% off on Tuesdays!) reminded me that I needed to share this recipe.

You’ll be thankful that I did.  It’s an easy recipe with a big punch.  Warm out of the oven, the filling slides down like pudding; sweet and comforting and the perfect contrast to tart Nantucket cranberries.  After a night in the refrigerator, its is more meringue-y with a set, puffy texture; the entire pie just feels so light, you won’t feel bad about going back for seconds…or thirds.  Which you’ll do, because it’s that good.

Amber’s Go-To Pie Crust

Ingredients

  • 1 1/3 cup flour
  • 1/4 teaspoon salt
  • 1/3 cup cold butter, sliced
  • 5 tablespoons ice cold water
Directions

Preheat oven to 425F.  Stir together flour and salt. Using a pastry blender, cut in butter until pieces are pea-sized.  Sprinkle water over of the mixture; gently toss with a fork. Push dough to the side of the bowl until all the dough is moistened. Form dough into a ball.  On a lightly floured surface, use your hands to slightly flatten dough. Roll dough from center to edges into a circle about 12 inches in diameter.  To transfer dough, wrap it around the rolling pin. Unroll dough into a 9-inch pie plate. Ease dough into pie plate, being careful not to stretch or tear it.  Rim to 1/2 inch beyond edge of pie plate. Fold under extra dough or move to “patch” uneven or torn areas. Crimp edge as desired. Do not prick pastry.  Makes a single crust.

Cranberry Filling

Ingredients

  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1 heaping tablespoon all-purpose flour
  • 1 egg white
  • 1 cup heavy whipping cream
Directions
Wash and pick over cranberries.  Pour cranberries into prepared pie crust to form a thick layer.  Cover cranberries with 1/3 cup sugar. In a medium bowl, sift together remaining 2/3 sup sugar and flour; set aside.  In a seperate bowl, beat egg white until stiff peaks form, then slowly fold into sugar, flour mixture.  Slowly stir in heavy cream until combined. Pour cream mixture onto cranberries.  Bake pie for 10 minutes at 425F, then lower temerature to 350F and bake for about 40 minutes more, until golden and set.  Let pie cool (as long as you can stand it) before serving.

    Aaah! Cranberries and Nantucket. What could be better? Maybe clam chowder at The Brotherhood of Thieves??

    Definitely Clam Chowder from Brotherhood!!! That’s our very first meal on the island whenever we are lucky to vacation there. I wish they would package it and sell it in Colorado!!!

    Amber just finished making the cranberry custard without the crust since Rik didn’t want it this time. Using up our cranberries from Christmas. This is such a great tasting dessert…we absolutely love it. I think my Valentine pie might have to be this one!! Also loved the pictures of Chris’ Mom. She sounds like a wonderful Grandma. Sandy

Zara made a #texassnowman - tiny, full of grass and leaves, but a legit snowman. 😂 We have the fastest snowflakes I've ever seen falling down here right now and could get up to 4 inches! The girls are over the moon.

We found a mountain in Texas! Chris gave me a hiking trip to @enchantedrockstatenaturalarea  for Christmas ( ♥️ experiences not things) and today I "cashed in" on my gift. We packed lunches, bundled up and drove about 1.5 hours, then spent the day hiking all around the mountain, through boulders, and up to the top. 

We ended up hiking about 9 miles and everyone had a great time. Chris gets a medal for hiking at least half of it with Addie on his back, but she walked a few really good stretches too. She did great until she fell into a prickly pear. 😫 Luckily that was at the end of the day. Here's a few shots from the day - I even managed to get is all into a selfie, though with 6 people it seems like we're just about in selfie-stick territory...

Our 1,000 piece project and today the girlie on the right turned 8. 

 I was in and out of calls all day so was more than a little shocked by the ridiculousness in the Capitol when I finally saw the news at 4:55 pm. Sometimes life feels so surreal. It was a normal work day and it also wasn't a normal day at all. There was... an attempted coup? Out of control protests? Whatever we call it, at the least, it was a day that is likely to have long-lasting reverberations in our society (maybe not all positive) but it was also day of celebration and joy. Not just for our birthday girl but also for a friend and a cousin who both had babies today too.

It's hard to know how all these pieces fit together and what to make of life right now. Every day feels a bit like a roller coaster. It's crazy but I guess we just have to try to enjoy the ride and trust that eventually we'll be able to see the whole picture.

I can post a #Christmas picture the day after New Years, right? Because that's totally where I am right now. Months behind on the socials from my work hard/play hard life during which I was either glued to my computer working to launch our new plugin or being a total luddite ignoring my phone. I  barely even took pictures of the kids. 😮 

So this is pretty much it from our Christmas and New Year's celebrations which were perfectly lovely, and now it's 2021! I'm proud of how much we managed to hold it all together through 2020 and I hope to someday say more about that when I don't feel like I'm being pulled in 50 different directions by kids and trying to keep a business afloat. Here's to a new year...hopefully better than the last.

Happy first birthday to my little Vivienne. There was no themed birthday party considering the times we're in, but that's alright. Probably, if we're being honest, for a baby, that's preferable. No weird things messing up her routine, just a nice day at home with the family, fun crawling around outside in the leaves, and then pumpkin cake after dinner.

At one, Vivi is such an incredible delight. She laughs so much more than any of the other girls did as babies - she'll even start laughing if she just hears the word "funny." She keeps us all smiling all day long. She's pulling herself up on things, but isn't doing too much stepping yet, so I expect we're going to have another late walker. She knows a handful of words, loves to quack at ducks and neigh at horses, crawls all around the house finding things to get into, dances when she hears music, and loves pretty much all food (making up for her early days). I think she looks like Zara.

It's been a whirlwind year, but I most certainly could not have asked for a better tiny human to share 2020 with or to be part of our family. ♥️
