Apple Butter

Whenever I make apple butter, I always think of my brother Brandon.  Growing up, I never really liked apple butter, but he loved it.  Chris loves it too, and I’ve come around enough to eat my own apple butter, so it’s generally a fall tradition.

The thing I like about canning apple butter is that it’s a lot more forgiving than jelly.  There’s no critical rush to get it into the jars exactly one minute after you’ve added pectin, in fact you don’t even have to add pectin at all.  It’s pretty much like making applesauce then adding sugar, spices, and cooking it way down.  You could actually even save time and start with a jar of applesauce if you felt so inclined.  I also like that it can be split if you don’t have time to do it all at once (I did the apple sauce stage last night and the rest tonight) and that most of it doesn’t require more than a stir every 10 minutes or so which means, though the recipe takes a long time from start to finish, it’s not really time you’ll be chained to the stove.  Basically, this is an easy fruit spread with a big bang…especially when packaged in adorable mini 4oz jars just perfect for giving away.

This recipe makes about 10 cups (8oz) of apple butter (may differ slightly depending upon how you core your apples).  It takes approximately 3 hours from start to finish.

Important!  Please read this post about canning basics first!!

Ingredients

  • 6 lbs tart cooking apples (I always use organic), pealed, cored, and quartered
  • 4 1/2 cups organic apple cider
  • 3 cups sugar
  • 3 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
Directions
In a 10 quart heavy-bottom pot, combine apples and cider.  Bring to boiling; cover and reduce heat.  Simmer covered for 30 minutes, stirring occasionally.  Press through a food mill or a sieve.  (This step may be done a day or two ahead of time; store covered in the refrigerator.)
Return apple sauce to the pot.  Stir in sugar, cinnamon, cloves, and allspice.  Bring to boiling; reduce heat.  Cook, uncovered, over very low heat 1 1/2 hours or until a very thick mixture mounds on a spoon, stirring occasionally.
Meanwhile, prepare canning jars and hot water bath following steps found here.  Ladle hot apple butter into hot, sterilized jars, leaving 1/4 inch headspace. Wipe jar rims; put on lids and hand tighten metal bands.  Process in a boiling water canner for 5 minutes (begin timing when water returns to a boil).  Remove jars and cool on racks.

My family has been making applebutter for over 40 years. May I suggest reducing (by cooking) the cider by half then adding the apples? Depending on the apples, this should eliminate the need for granulated sugar completely.

I’ll have to try that Jane! I’m all for reducing sugar where possible. Do you know how it holds up to canning? I’m usually hesitent to reduce sugar in recipes that I’m going to water bath can since it acts as a preservative.

Zara made a #texassnowman - tiny, full of grass and leaves, but a legit snowman. 😂 We have the fastest snowflakes I've ever seen falling down here right now and could get up to 4 inches! The girls are over the moon.

We found a mountain in Texas! Chris gave me a hiking trip to @enchantedrockstatenaturalarea for Christmas ( ♥️ experiences not things) and today I "cashed in" on my gift. We packed lunches, bundled up and drove about 1.5 hours, then spent the day hiking all around the mountain, through boulders, and up to the top.

We ended up hiking about 9 miles and everyone had a great time. Chris gets a medal for hiking at least half of it with Addie on his back, but she walked a few really good stretches too. She did great until she fell into a prickly pear. 😫 Luckily that was at the end of the day. Here's a few shots from the day - I even managed to get is all into a selfie, though with 6 people it seems like we're just about in selfie-stick territory...

Our 1,000 piece project and today the girlie on the right turned 8.

I was in and out of calls all day so was more than a little shocked by the ridiculousness in the Capitol when I finally saw the news at 4:55 pm. Sometimes life feels so surreal. It was a normal work day and it also wasn't a normal day at all. There was... an attempted coup? Out of control protests? Whatever we call it, at the least, it was a day that is likely to have long-lasting reverberations in our society (maybe not all positive) but it was also day of celebration and joy. Not just for our birthday girl but also for a friend and a cousin who both had babies today too.

It's hard to know how all these pieces fit together and what to make of life right now. Every day feels a bit like a roller coaster. It's crazy but I guess we just have to try to enjoy the ride and trust that eventually we'll be able to see the whole picture.

I can post a #Christmas picture the day after New Years, right? Because that's totally where I am right now. Months behind on the socials from my work hard/play hard life during which I was either glued to my computer working to launch our new plugin or being a total luddite ignoring my phone. I barely even took pictures of the kids. 😮

So this is pretty much it from our Christmas and New Year's celebrations which were perfectly lovely, and now it's 2021! I'm proud of how much we managed to hold it all together through 2020 and I hope to someday say more about that when I don't feel like I'm being pulled in 50 different directions by kids and trying to keep a business afloat. Here's to a new year...hopefully better than the last.

Happy first birthday to my little Vivienne. There was no themed birthday party considering the times we're in, but that's alright. Probably, if we're being honest, for a baby, that's preferable. No weird things messing up her routine, just a nice day at home with the family, fun crawling around outside in the leaves, and then pumpkin cake after dinner.

At one, Vivi is such an incredible delight. She laughs so much more than any of the other girls did as babies - she'll even start laughing if she just hears the word "funny." She keeps us all smiling all day long. She's pulling herself up on things, but isn't doing too much stepping yet, so I expect we're going to have another late walker. She knows a handful of words, loves to quack at ducks and neigh at horses, crawls all around the house finding things to get into, dances when she hears music, and loves pretty much all food (making up for her early days). I think she looks like Zara.

It's been a whirlwind year, but I most certainly could not have asked for a better tiny human to share 2020 with or to be part of our family. ♥️
