Breakfast Spice Cookies

Ingredients

  • ½ cup butter
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup wheat flour
  • 1/2 cup oatmeal
  • ¼ tsp salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 2 cups shredded carrot
  • 1 cup golden raisins

Directions

Preheat oven to 350.

In medium bowl, cream the butter and sugar. Stir in the pumpkin and vanilla.

In separate bowl, stir together the flours, oatmeal, salt, baking soda, baking powder, and spices; stir into the creamed mixture.

Stir in carrots and raisins, and drop onto cookie sheet.  Bake in preheated oven for 8-10 minutes.  Allow to cool for a minute or two before transferring to wire racks.  Makes approximately4 dozen cookies.

Note

You may notice that there’s more sugar in the picture than the recipe calls for.  That’s because originally I mad this with a full cup (1/2 white, 1/2 brown sugar), but I thought they came out too sweet for my purposes, so I reduced it to 2/3 cup (1/3 each) in this recipe.

    I had a problem getting past the sugar and butter stage again…. ha! Also, I was reading those comments and thought “wow, that other chick named sarah loves butter and sugar too!” but that was me, in the past. at least I’m consistant.

We had a cold snap and yesterday we had to get all bundled up for Zara's soccer game. It was 30 degrees and, despite these pictures, Vivi's patience for being out there did not last long. Tomorrow it's supposed to be 80 degrees and we're really looking forward to warmth again.

By the way, my awesome gaiter came from our client @isacattostudio. Isa paints patterns and makes really beautiful textiles and notebooks with her patterns. ♥️ her work and team.

Yesterday we got our first taste of summer. It was warm enough that we got out the sprinkler in the afternoon. I worked most of the day but had a nice break for a couple hours in the afternoon during which I sat outside listening  to music and watching the 4 of them dance in the yard. I couldn't ask for much more on a Monday.

Walking around the neighborhood with Z and I'm reliving my first experience with entrepreneurship: @girlscouts cookie sales. My mom was our troop leader (all the way through Juniors) and I remember our garage piled high with boxes and boxes of cookies. 

It's fun watching Z try her hand at sales. She is fearless and no problem describing every cookie to complete strangers. Despite having never done it before, she has an incredibly aggressive goal of selling 1500 boxes of cookies. If any kid can do it, though, I think she can.
