Buttermilk Bread

Ingredients

  • 1 1/2 tablespoons active dry yeast
  • Pinch of brown sugar
  • 1 cup warm water
  • 1 1/2 cups tepid buttermilk
  • 1/4 cup honey
  • 1/4 cup canola oil
  • 1 tablespoon salt
  • 1 cup whole-wheat flour
  • 5 1/2 – 6 cups bread flour, plus extra as needed

Directions

This recipe will make two 9×5″ loaves.

In a bowl, sprinkle the yeast and brown sugar over the water and stir to dissolve. Let stand until foamy, about 10 minutes.

In a stand mixer fitted with the paddle attachment, combine the buttermilk, honey, oil, salt, wheat flour and 1 cup of the bread flour. Beat on medium-low speed until creamy, about 1 minute.

Beat in the yeast mixture and 1 cup bread flour and beat for 1 minute. Beat in the remaining bread flour, 1/3 cup at a time, until the dough pulls away from the sides of the bowl.

Transfer the dough to an oiled deep bowl and turn the dough once to coat it. Cover loosely with plastic wrap and let rise at room temperature until doubled in bulk, about 1 1/2 hours.  Although a time frame is given for each one, it cannot be precise, for how long any rising takes depends on a variety of factors such as the temperature of the room, the amount of yeast used, and even the weather. To test if a dough has risen adequately for the first rising, press 2 fingers into it. If the indentations remain, the dough is ready to be shaped and left to rise a second time.

Lightly grease two 9-by-5-inch loaf pans. Turn the dough out onto a lightly floured board. Divide in half and pat each half into a long rectangle. Fold 1 rectangle like a letter, overlapping the short sides in the middle; press to flatten. Beginning at a narrow end, tightly roll up the dough into a thick log. Roll the log back and forth with your palms until it is the same length as the pan. Pinch the ends and the long seam to seal. Place the loaf, seam side down, in a prepared pan, tucking the ends under to make a neat, snug fit. Repeat with the second portion. Cover loosely with plastic and let rise until about 1 inch above the rim of each pan, about 1 hour.

Preheat the oven to 350F. Bake until the loaves are golden brown and pull away from the pan sides, about 40 minutes. Turn out onto racks and let cool completely.

Bus stop selfie with Nora. This week she moved from her tiny charter school with only 18 eighth graders to the public middle school with over 200. And now she rides the bus.

The charter school wasn't challenging her enough, has a huge percentage of students who are disruptive in the classroom, and has been having trouble keeping teachers. Last year she loved it. But this year it was one thing after another, so right before Thanksgiving she and I went to go tour our neighborhood  middle school, and she immediately wanted to make the switch.

We've never had a kid in public school and I was nervous about how the transition would go from such a small school to a big one, but so far she's loving it and is glad she decided to move schools. It helps that she knows kids there already from her dance team. Hopefully she'll still be happy when she starts getting homework. Coming from a no homework school that may be a shock to us all.

Zara's costume was my favorite this year - Nora did her makeup and she wore my flower girl dress from my mom and step-dad's wedding. She might have worn it better. 😂
